Salad, here's another ingenious dish from the Waldorf-Astoria
Hotel:
Ingredients:

1 slice Canadian bacon |
Butter |
|
1 egg |
1/3 cup Hollandaise sauce |
|
1/2 an English muffin |
|
How to Make It:
1. In a small frying pan, warm the Canadian
bacon thoroughly over low heat.
2. Poach the egg.
3. Toast the English muffin and spread with
butter.
4. To assemble, place the muffin on a plate,
place the Canadian bacon on the muffin, top with egg and
cover with Hollandaise.
Serves 1.
