Lobster a la Newburg
According to tradition, it
was sailor Ben Wenburg who returned to New York with this
recipe in hand. He presented it to an old friend, famous
restauranteur Charles Delmonico, whose menu soon featured
Lobster a la Wenburg.
The two friends later had a
parting of ways, however, resulting in the letters being
transposed on the menu to read Newburg ...
Ingredients:

2 cups cooked lobster meat |
3 eggs |
|
1/4 cup melted butter |
1 cup heavy cream |
|
1 tbsp. sherry |
1 tsp. paprika |
|
1 tbsp. brandy |
2 cups cooked rice |
|
Salt and pepper |
|
How to Make It:
1. Heat the butter and lobster in a large
skillet.
2. Add the sherry and brandy and simmer
for 1 minute.
3. Salt and pepper to taste.
4. In a large bowl, beat the eggs and cream.
Pour over lobster and heat until slightly thickened.
5. Serve over rice and sprinkle with paprika.
Serves 4.
