Minute Steak
Catering to the 8 o'clock
curtain crowd in the heart of the Broadway theater district,
this get-'em-out-quick dish originated at Rector's Restaurant
during the turn of the century:
Ingredients:

3/4 cup sliced mushrooms |
2 minute or sandwich steaks |
|
2 tbsp. butter |
Salt & pepper |
How to Make It:
1. In a small frying pan, heat the mushrooms
with 1 tbsp. butter.
2. In a separate pan, melt the remaining
butter and fry the steaks, one minute per side..
3. Salt and pepper to taste.
Serves 2.
